Borage is a tall, attractive plant with bright blue star-shaped edible flowers. It's a delightful plant to have in the garden. Bees love it.
All parts of the plant are edilble except the roots. The leaves have a slight cucumber taste which goes well in salads or steamed with silver beet or cabbage.
The flowers garnish a salad or embelish a drink when frozen in an iceblock.
Grow borage in a sunny spot with well drained fertile soil.
Borage dies down in the winter, however self sows readily and adds to a cottage garden design.
